Now that Christmas is behind us, let's share some of those good recipes for leftover ham. I don't really have that many; hopefully you do.

What leftovers? We ate and drank like Romans! If I had any ham left, I would have made ham & cheese omlettes or just sandwichs! What did you do with your leftover ham? :lol:

I made ham dinners ad nauseam (almost literally), I made split pea with ham soup, and served ham with Saturday waffles. Not too creative, but at least I didn't waste it.

If you know how to make chicken or turkey tetrazzina, you've got a good recipe for ham. If you don't have the recipe, let me know and I'll post it.

I would appreciate you posting the recipe. I have never made a tetrazzini, but would undoubtedly like it.

Tetrazzini from "Southern Sideboards" cookbook and ColleenLoweFenrich.

Can use cooked turkey, chicken or ham.

1 (16 ounce) package uncooked pasta (I use twists)
3 1/2 cups grated Cheddar cheese, divided
8 Tablespoons Paramesan cheese, divided
4 cups diced, cooked turkey, chicken or ham
1 (4 ounce) can diced pimientos
l/2 green pepper, cut in thin silivers
1 small onion, minced
2 cans of cream of mushroom soup
1 cup chicken broth
l/2 cup dry vermouth
Salt and pepper to taste.

Cook and drain pasta. Reserve 1 cup Cheddar cheese and 4 Tablespoons Parmesan cheese. Combine the remainder of Cheddar cheese and Parmesan cheese and all remaining ingredients. Toss with pasta. Pleace in greased casserole and sprinkle with reserved cheeses. Cook. COVERED for 45 minutes at 350 degrees. Serves about 10.

Note: You can play with this recipe. Use different kinds of cream soups and veggies. For example, I always eliminate onions and use artichoke hearts instead. You can make this a day ahead of serving and store in frig. When you do this, cook it a little longer than the suggested 45 minutes.

The recipe for leftover ham:

Step 1 - Drive to your parents house
Step 2 - Have them prepare a plate of leftovers
Step 3 - Enjoy the leftovers


The easiest recipe ever!
